Zuppa Toscana
Inspired by the popular Olive Garden soup. Pairs great with a side of bread!

Ingredients

lb
sausage
1
red onion
finely chopped

slices
bacon
crumbled
4
cloves
garlic
finely chopped

baby red potatoes
¼" slices
½
bunch
kale
finely chopped
¾
cup
heavy cream
3
cubes
chicken bouillon
salt & pepper
to taste
Instructions
Brown sausage in skillet, drain & set aside.
Add onion, bacon, & garlic to skillet. Cook until onions are clear, then switch contents of skillet to a large pot.
Slice potatoes {we used our William Sonoma french fry cutter:)} & add to pot with water and bouillon cubes.
Cover & bring to a boil. Simmer 20-25 minutes, until potatoes are almost done.
Add remaining ingredients, including the sausage, and simmer for 5-7 more minutes. Serve with bread if desired.
