One of my favorite “quick & easy” meals is quesadillas and guacamole. However, the only gf guacamole I can seem to find is a little pricey, so I thought it was about time I learned to make it myself. I found {this} super simple & super yummy recipe at The Yankee Southern Belle Cooks and I love it! {I used 3 avocados instead of two, so all my proportions are a little higher.}
Guacamole
Prep Time: 10 minutes
Yields: abt. 3 cups
Ingredients:
- 3 avocados
- 1/2 cup sour cream
- 1/2 cup salsa
- 1/2 tsp salt
Directions:
Halve avocados & remove pits. Scoop out contents into bowl and mash with fork or spoon. Stir in remaining ingredients & enjoy!

February 26, 2012 at 4:27 amOh yum! I love guacamole! Besides the salsa, this is how I usually make mine too, but sometimes with lemon or lime juice thrown in and maybe a chopped onion. Salsa in it sounds like a good idea!
