This is officially my second month of “freezer meal” cooking, and I already feel like I’ve learned a lot so far! Last month I got super excited to tackle the whole cooking ahead concept, so I found a bunch of recipes that looked good, purchased the ingredients, & was excited to get started. Let’s just say things didn’t go as well as I had hoped. The biggest thing I learned was the importance of thoroughly reading the recipe before deciding it’s a good freezer meal candidate… several recipes required a TON of preparation and steps before any freezing could be done, and either ended up not happening, or just being cooked as “regular” meals. The Salmon & Snow Peas was one we were able to modify to be a pretty simple freezer meal!
Honey Glazed Salmon and Snow Peas
SUPPLIES
- 1 Slow Cooker
Ingredients
- 2 frozen salmon fresh is fine too, I just find frozen is cheaper & I freeze it all anyways!
- snow peas
- ¼ cup LaChoy GF soy sauce
- ¼ cup honey
- ¼ cup lemon juice
Instructions
To Prepare Immediately
- Mix soy sauce, honey, & lemon juice.
- Mix half of sauce combo in pan with the snow pease and heat until peas are to desired hardness.
- Cook salmon according to directions.
- Remove peas from pan onto a plate, and top with salmon and remaining sauce mixture.
To Freeze for Later
- Label freezer safe ziplock bag or other container
- Mix soy sauce, honey, & lemon juice.
- Place rinsed peas in freezer bag & top with salmon, filling it half way up the side of a freezer bag.
- Add sauce mixture to bag.
- Fold the empty half of the bag on TOP of the food so that all the juice doesn't drain away from the ingredients in the freezer}.
- To prepare, slide contents of bag into crockpot keeping the salmon on top. Cook on LOW for 2-3 hours. Serve with rice if desired.
